Ingredients 

For the Chicken: 

  • 4 boneless, skinless chicken breasts (or thighs
  • 2 tbsp olive oil 
  • 1 1⁄2 tbsp Sweet Heat Fusion seasoning 

For the Vegetables

  • 2 cups broccoli florets 
  • 1 red bell pepper, sliced 
  • 1 zucchini, sliced into rounds 
  • 1 cup baby carrots, halved 
  • 2 tbsp olive oil
  • 1 tbsp Sweet Heat Fusion seasoning 

Optional Garnish

  • Fresh cilantro, chopped
  • Lime wedges 

Instructions 

Preheat the Oven: 

  • Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly grease it with cooking spray

Prepare the Chicken: 

  • Pat the chicken dry with a paper towel.
  • In a small bowl, mix 2 tbsp olive oil with 11⁄2 tbsp of Sweet Heat Fusion seasoning.
  • Rub the mixture evenly over the chicken breasts, ensuring every piece is well- coated

Season the Vegetables: 

  • In a large bowl, toss the broccoli, bell pepper, zucchini, and carrots with 2 tbsp olive oil and 1 tbsp of Sweet Heat Fusion seasoning. Mix until the veggies are evenly coated

Assemble the Sheet Pan: 

  • Arrange the seasoned chicken breasts on one side of the prepared sheet pan.
  • Spread the vegetables evenly on the other side, ensuring they're in a single layer for even cooking

Bake: 

  • Place the sheet pan in the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • For extra caramelization, broil on high for the last 2-3 minutes

Garnish and Serve: 

Remove from the oven and let the chicken rest for 5 minutes

Garnish with fresh cilantro and serve with lime wedges for an extra zing
